One of our favorite aspects is the pride we take in creating real authentic recipes for our guests.  For instance, our sauces are handmade from fresh ingredients ensuring a flavorful taste.  Whether they’re used to complement the main course or as a meat tenderizer, the variety of Mexican sauces can sometimes be as overwhelming as choosing the ideal restaurant.  Here, we’re taking the time to explain one of the most commonly questioned sauces; molè. 

 

What is Molè?

Known as the National Dish of Mexico, molè is one of the most labor-intensive sauces to create.  Regardless of the effort needed to create this traditional sauce, it’s one of the most commonly used in authentic Mexican dishes. Although there are several regions that fight for its claim-to-fame, molè sauces vary in Mexico based upon the region at hand. Besides, many of these recipes are handed down through generations. Thus making the original origin a hard fact to decipher.  However, even though variations are made; the base of the sauce remains the same.

 

The Ingredients

All preparations begin with one or more type of chili pepper.  These peppers can include; ancho, pasilla, mulato, and chipotle.  Other ingredients can then include but aren’t limited to; black pepper, cumin, cloves, anise, tomatoes, tomatillos, garlic, dried fruits, and herbs. To make life a little easier, you can group your ingredients into five basic categories:

  1. Chiles
  2. Sour (tomatillos)
  3. Sweet (dried fruits and sugars)
  4. Spices
  5. Thickeners (Nuts)

 

The typical sauce will include an average of twenty ingredients, at minimum.  Once the ingredients are selected, they are roasted for a day and ground into a fine powder.  Then mixed with water, the paste becomes more of a broth which is furthered simmered until a thick consistency is obtained.  A prepared sauce will keep fresh for about three days.  However, you can freeze the paste for one year.
