What you need:

• 3 cups of cooked pinto beans undrained
• ¼ chopped Spanish onion
• 1 minced garlic clove
• 2 oz chorizo
• 2 oz chopped bacon
• 1 ½ cups of chopped tomato
• 1 chopped chili pepper (spice it up or keep it mild here, your choice)
• Freshly chopped cilantro to taste

Begin by setting your beans in a large pot. Separately, you’ll want to fry up your meats. Add the onion, garlic, and pepper to your frying pan towards the end of the cooking time. Next, add your tomatoes for around 2 minutes. Combine ingredients into the pot with your beans and simmer for 20 minutes. Be sure to add water if needed, as the consistency shouldn’t be thick. Finally, serve topped with fresh cilantro and enjoy!
