Here’s a few easy to make recipes to at home.

Quesadilla

One of the easiest Mexican meals to make is the quesadilla. The best part, you can make them any way you choose with whatever is in the fridge! Be sure to check out our previous article for a few inspiring ideas and little tuck-away knowledge for trivia night!

Fresh salsa

Another easily customized Mexican favorite is fresh salsa. Here’s one of our favorite ways to whip up this healthy snack (or quesadilla topper):

• 3 medium-sized tomatoes, diced

• ¼ red onion minced, or for a sweeter taste try Vidalia.

• Fresh chopped cilantro to taste.

• ¼ jalapeno pepper, seeded and minced.

• Freshly squeezed lime juice, about a teaspoon

• ½ minced garlic glove

• Salt and pepper to taste

• Pinch of cumin if you can tolerate the flavor.  This spice tends to be a love it or hate it flavor; we love the deep tones it added to any dish!

Mix your ingredients and pop them in the fridge! The longer you chill your salsa, the more the flavors will infuse with one another.

Michelada

Of course, you need a refreshing Mexican drink to compliment your cooking skills. Nothing compares to a traditional margarita, but if you’re looking for a change and are a fan of Bloody Mary’s – try the Michelada. With a beer base, hot sauce, and chili powder, this refresher is sure to bring some excitement!

• On a plate, combine a dash of salt and 3 tablespoons of chili powder

• Rub a lime wedge around the rim of your glass and dip it into the mixture to coat the rim

• Squeeze another lime wedge into your glass and fill with ice

• Add 1 can of beer, a dash of hot sauce, and a dash of Worcestershire sauce

• Enjoy!
